CHITIN NANOCRYSTAL STABILIZED EMULSIONS: STABILITY, INTERACTIONS WITH BETA-LACTOGLOBULIN, DIGESTION BEHAVIOR AND CYTOTOXICITY Chandni Chandran Advisor University of Guelph,2015 Dr Loong Tak Lim Solid particle stabilized emulsions have gained attention due to their surfactant free nature and high stability. However, insights on the interactions between solid particles stabilizing emulsions and surface active species found in food are important in formulation and use of such emulsions in real food applications. The properties of chitin nanocrystal (ChN) stabilized emulsions in the presence of beta-lactoglobulin (β-Lg), a commonly used emulsifier protein were studied as a function of pH. SDS-PAGE established that the protein co-existed with ChN at the interface. In vitro digestion studies demonstrated that, addition of β-Lg did not alter the rate of lipolysis observed with ChN stabilized emulsions. Electrophoresis on digestion end products also showed evidence for some protection offered by ChN to β-Lg at the interface against proteolysis. The results of cytotoxicity studies using Caco-2 cells, indicate that ChN dispersions do not have a detrimental effect on the proliferation of cells.

Spray drying behaviour and functionality of beta-lactoglobulin-/pectin-stabilized oil-in-water emulsions
Aim of the present study was to investigate the impact of atomization and drying on the functionality of emulsions with an oil/water-interface (o/w-interface) consisting of beta-lactoglobulin (single layer emulsion) and sequentially adsorbed pectins with varying degree of methylation at pH<pI (bilayer emulsions). Thus, the emulsion systems were characterized with respect to their behavior durin...
متن کاملEffects of electrolyte concentration and pH on the coalescence stability of beta-lactoglobulin emulsions: experiment and interpretation.
Experimental results are presented about the effects of ionic strength and pH on the mean drop-size after emulsification and on the coalescence stability of emulsions, stabilized by a globular protein beta-lactoglobulin (BLG). The mean drop-size is determined by optical microscopy, whereas the coalescence stability is characterized by centrifugation. In parallel experiments, the zeta-potential ...
متن کاملRheological Behavior and Droplet Size Distribution of Emulsions Stabilized by Whey Proteins and Chitosan during ex vivo Digestion
The effect of type of emulsifier, 2 w/w% whey protein concentrate (WPC) or 2 w/w% WPC and 0.1 w/w% chitosan (CH) on the rheological changes and droplet size distribution during the ex vivo digestion of oil in water emulsions (pH 2) containing 1 w/w% rapeseed oil (RSO) were investigated. The procedure was used to mimic the human gastro duodenal digestion in two steps, gastric phase at pH 2 for 3...
متن کاملInteractions of whey proteins during heat treatment of oil-in-water emulsions formed with whey protein isolate and hydroxylated lecithin.
The interactions of proteins during the heat treatment of whey-protein-isolate (WPI)-based oil-in-water emulsions with and without added hydroxylated lecithin were studied by examining the changes in droplet size distribution and the quantity and type of adsorbed and unadsorbed proteins. Heat treatment at 90 degrees C of WPI emulsions resulted in an increase in total adsorbed protein; unadsorbe...
متن کاملModeling the Rheological Properties of Carboxymethylcellulose Stabilized O/W Emulsions Based on Sunflower Oil and Tallow Fat
The aim of this research was to assess the effect of fat type and concentration as well as the continuous phase viscosity on the rheological properties of an oil-in-water (O/W) emulsion. Thus, sunflower oil and tallow fat were used as the dispersed phase of the emulsion both at 10 and 50% (w/v) and CMC solutions (at 0.1, 0.3 and 0.5% w/v) were acted as the continuous phase. CMC solutions and em...
